As corporate executive chef at Carver Road Hospitality, Chef Daniel Ontiveros oversees culinary operations for its esteemed and award-winning venues across the United States, such as Carversteak at Resorts World Las Vegas, Seamark at Encore Boston Harbor, Rosevale Kitchen in New York City, as well as Flanker Kitchen + Sports Bar in Salt Lake City, Phoenix and Las Vegas.

Born and raised in central Texas, Chef Ontiveros’s culinary journey began after graduating from Le Cordon Bleu in Austin, Texas, where he honed his craft in the bustling local culinary scene before bringing this burgeoning career to Las Vegas, Nevada. His first position on the Las Vegas Strip was for Michelin star Chef Thomas Keller’s globally renowned Bouchon Bistro at The Venetian Resort, where he served as Executive Sous Chef. This experience set the foundation for his culinary style, which is deeply rooted in classic French techniques. Over the years in Las Vegas, Chef Ontiveros refined his skills at world-class restaurants, including Michael Mina’s Nob Hill Restaurant where he served as Sous Chef, as well as Chef of the century Joël Robuchon’s Forbes Five Star, AAA Five Diamond and Wine Spectator Grand Award-winning, Joël Robuchon at The Mansion at MGM Grand. Chef Ontiveros has held significant positions at additional beloved Las Vegas restaurants including Comme Ça by Chef David Myers, Scotch 80 Prime and T-Bones Chophouse, which have positioned him to oversee culinary teams of the highest pedigree and deliver exceptional vision and superior execution.

His tenure with Carver Road Hospitality has garnered widespread recognition, with Carversteak being featured in prominent publications such as Forbes' “Best New Restaurants in Las Vegas,” Eater’s “Best Steakhouses in Las Vegas” and Las Vegas Weekly’s “Best Steakhouse 2022.” Most recently, Flanker Kitchen + Sports Bar was named “Best Sports Bar 2024” by Las Vegas Weekly.

Driven by a deep commitment to mentoring and inspiring others in the kitchen, Chef Ontiveros is dedicated to fostering the next generation of culinary talent. Outside of the kitchen, his greatest passion is his family, and he is committed to raising his two children to become kind and respectful individuals, which serves as his greatest motivation, both personally and professionally.
