John Anthony is the Operating Partner of Las Vegas’ new home for cookery and libations, Sparrow + Wolf. As chief of the restaurant’s operations, Anthony is responsible for maintaining guest and team relations while streamlining operations for maximum profitability. A skilled leader, he leads the charge to execute the front of the house experience for which this exciting new hot restaurant is known.
His core strengths go beyond operations and into a natural ability to develop memorable and long-lasting relationships. He enjoys inspiring his teammates to grow both professionally and personally, which has left a lasting impression on those who have spent time with him.
Anthony started his culinary career in his hometown in Pennsylvania. Raised in his father’s pizzeria, The Purple Onion, he reveled not just in the magic of transforming basic ingredients into a delicious meal, but in the sense of family the restaurant brought to the neighborhood. The experience left him with a deep love of the hospitality industry and inspired a career path spattered by similar settings which made him naturally feel at home.
Initially specializing in Mom-and-Pop style restaurants, Anthony brought his strengths into the niche of assisting establishments in need of a course correction. Once profitable, this exercise often led to the sale of the restaurants, teaching Anthony many valuable lessons including the importance of cost controls, leadership, and quick acclimation within new organizations.
Driven by the hunger for a larger challenge, he looked to sharpen his skills on the largest F&B stage he could think of, Las Vegas. Anthony accepted a position with Gallagher’s Steakhouse at New York-New York Hotel & Casino and made the move to Sin City. Since the move, he has had the privilege of opening some of Las Vegas’ most prestigious dining establishments, including Social House (named 2007’s “Best New Restaurant 2007” by Las Vegas Review-Journal), Cathouse (lead by Iron Chef Winner, Chef Kerry Simon), and Comme Ça Las Vegas (named 2011’s “Best Restaurant” by Desert Companion and 944).
As his name and experience continued to grow, Anthony was tapped for several unique consulting positions. He commuted between Los Angeles and Las Vegas to work with powerhouse hospitality groups such Harry Morton Holdings (Pink Taco, Fukuburger, Viper Room), The One Group (STK, Bagatelle), and The Lore Group (Rock & Reilly’s, Pearls Rooftop, and Maia).
