Kimberly Mcintosh is the chef and co-owner of MILKFISH Bakeshop. She spent much of her cooking and baking career in Santa Barbara, California, where she graduated from culinary school before transitioning to the front-of-house. Mcintosh worked her way up to managing restaurants in the San Francisco Bay Area before moving to Las Vegas, Nevada, at the end of 2013.

When the pandemic hit, Mcintosh decided to take a step back from working in restaurants. She and her husband Joshua hosted their first virtual bake sale with Bakers Against Racism, a baking collective that raises money for nonprofit organizations that address racial and social injustice. Over the next two years, they continued to host these bake sales, donating all net proceeds to organizations such as Safe Nest, The Center, and the American Federation of Suicide Prevention (Nevada Chapter). To date, MILKFISH Bakeshop has raised over $13,000 for nonprofits.

In 2022, they received an incredible opportunity to test out their Filipino-inspired bakeshop concept at Vegas Test Kitchen in Downtown Las Vegas. Mcintosh loves to create her bakes as a way of staying connected to her heritage, sharing it with others, and learning more about the history of Filipino cuisine and culture. 

Over the next couple of years, in addition to hosting pop-ups in different areas around town, they participated in local food events such as Picnic in the Alley, Asian Night Market, and Pine Dining at Mr. Charleston. They continue to host virtual bake sales for nonprofits, evolving it into a collaborative effort with other local bakers. Also, they began hosting their own community events, such as The Looban (loh-oh-bahn), a mini pop-up market featuring local, Filipino-owned small businesses and businesses that celebrate Filipino culture.

In 2024, they were nominated as James Beard semifinalists for Outstanding Pastry Chef and Baker. Guests can find MILKFISH Bakeshop at one of their pop-ups, ordering in advance off their Special Orders menu, or picking up from one of their local landing zones. When she is not baking, Mcintosh loves to work out and spend time with her family, especially her eight-year-old daughter, Leia, and five-year-old son, Cooper.
