Rachael Mintz is Vice President at OneSeven Agency, where her passion for storytelling, strategy, and events shapes every campaign she leads. With a strong foundation in PR and marketing, and roots in the restaurant world, Rachael brings both creative instinct and operational insight to her work across hospitality, dining, and lifestyle brands.
Before transitioning into public relations, Mintz built her career in food and beverage, working with renowned restaurants including Mon Ami Gabi, Wolfgang Puck Bar & Grille, and Del Frisco’s Double Eagle Steakhouse. That firsthand experience continues to inform her approach, giving her a deep understanding of restaurant operations, guest experience, and what truly resonates with diners.
Mintz began her PR career at the Palms Casino Resort during its $690 million rebrand and renovation, where she helped shape the property’s culinary and lifestyle positioning. Working alongside acclaimed chefs like Bobby Flay, Michael Symon, and Marc Vetri, she secured placements in top-tier publications including The New York Times, Bon Appétit, Forbes, Food & Wine, USA Today, and Hypebeast.
Since joining OneSeven more than six years ago, Mintz has played a key role in the agency’s growth, overseeing major national accounts and guiding both day-to-day execution and long-term strategy. Her work spans high-impact campaigns and national media placements for clients including Harwood Hospitality Group, The ONE Group, Lawry’s The Prime Rib, and Emeril Lagasse’s Delmonico Steakhouse and New Orleans Fish House.
Rachael also leads OneSeven’s internship program, mentoring the next generation of talent with a collaborative, hands-on approach that encourages creativity and confidence from day one.
A rare Las Vegas native, Mintz studied Communication Studies with a focus in journalism and media at the University of Nevada, Las Vegas. Outside of work, her love of food extends to her own backyard, where she’s passionate about gardening and growing her own fruits and vegetables, even in the desert. When she’s not building buzz or traveling for work, you’ll find her at home with her fiancé, Tim, their chocolate lab, Benny, and their cats, Mogli and Charlie, or dancing at a Dead show somewhere in the world!
